Vegetable Scrap Salad

Ingredients

broccoli leaves

cabbage cores

carrot scraps

kohlrabi greens

kale stems

pumpkin seeds

mixed greens

olive oil

balsamic

 

Directions

Toss all scraps into a bowl, add Olive Oil and Balsamic. Bonus Tip: You can sprinkle fennel fronds on top!
